Pine honey became gradually accepted as honey of good quality. It has no incisive taste or aroma, a very low tendency to crystallize is very thick, stores well, and is produced from pine forests far away from any environmental pollution. The most important characteristic of pine honey is that it can be kept for longer durations without its texture corrupts or crystallizes. Its colour is darker than the flower honey. What is the difference between flower/blossom honey and honeydew honey?

NOTE:
Organic honey varieties are not subjected to pasteurization process, they are in raw honey status. Because it is a raw honey, it  may crystallize after a while, indicating that it is normal and raw honey .The fact that the flower honey is crystallized is the most important assurance that it is a real flower bear. Balloons that have been added with syrup or fed with syrup do not crystallize in any way. Crystallization temperature of the honey seems to be about 12 degrees, when the temperature is much below this temperature it will crystallize. We recommend that you consume your crystallized honey with this state, if not you can turn it into its old forms by putting it in a bowl filled with hot water.
